One bite of delicious sushi is never quite enough, is it? Especially when it’s as delicious and fresh as what you get from a YO!, Bento, or Sushi Circle…. and it seems just one kiosk is not enough for many of Wonderfield’s new partners, either!
We’ve seen quite a few new kiosks owners decide to take on extra sites in the last few months, and who can blame them? We recently caught up with Evan from Limerick, who joined the Wonderfield franchise last year and is now preparing to open his 3rd kiosk.
From Ghost Kitchen to Sushi Empire
Evan spent years in hospitality and catering, eventually opening his own ghost kitchen during Covid. It was a career he loved but it one that came with long hours, relentless pressure, and virtually no work-life balance. A story anyone who has worked in kitchens and restaurants will empathise with.
However, Evan has always been an entrepreneur at heart, and franchising offered him a smarter path forward.
“I’ve always been into running my own businesses, and I’ve always been very keen on franchising as a way to do that.“ Evan told us. “I looked at several options, and even went across to a franchise show in London. Also, it would keep me in the foodie world, but I could get a lot more out of it than starting from scratch myself.”
Evan opened his first YO! kiosk in Limerick in September 2025, followed quickly by a second in Oranmore, County Galway. His third – a Sushi Circle in Supervalu Galway -is set to open this spring, but Evan isn’t stopping there. His goal is to open 10 locations across the west of Ireland within the next two years, combining YO! kiosks in Tesco with Sushi Circle in Supervalu.
